Goats Cheese, Sweet Pepper and Pumpkin Seed Pancakes

It's pancake day today. We forgot about it until this evening, so I whipped up a batch of quick crepes which we filled with goats cheese, spinach leaves, pumpkin seeds and jarred hot peppers.

Not bad for a last minute supper.

The crepes are a piece of cake to put together. I sifted a cup of flour with a pinch of salt and some lemon zest, then whisked in one egg and enough milk to make a smooth batter - about the consistency of light cream. I ladled the mix into a hot buttered frying pan for about minute each side. Easy!

(By the way, these peppers are a real discovery. Sweet and spicy - great to keep in the back of the fridge to jazz up a sandwich or salad!)

We're running low. I'd better stock up.
