Beetroot and Carrot Coleslaw

I love my food processor. Just look how pretty this salad is!

One big raw beetroot, two carrots. Whizz. Add dressing of choice. Creamy dressing works well and turns it into a more classic 'slaw, or a use a light vinaigrette for a fresher salad.

Sweet, tangy and cool. And so very colourful.
