Pink Grapefruit Granita

This recipe is so simple I could cry. And the end result is utterly refreshing and delicious. Especially on a sweaty day like today.

400 ml water
100 g icing sugar
Juice of one pink/red grapefruit
Juice of one lemon
Juice of one lime

Mix in a large tupperware box until completely combined. Make sure you include as much of the grapefruit 'tears' (flesh) as you can - these pop in your mouth and give a burst of intense flavour.

You end up with this:


Not very appetising, right? But just you wait...

(At this point you can add a handful of well crushed raspberries - this is great for taste but also gives the granita a lovely pink flecked colour)

Whack it in the freezer, without a lid on. Every 30 mins, stir well with a fork to break up any chunks of ice that have formed. After 3-4 hours, you will have a fresh, smooth, tangy granita.
