Cinder Toffee

Remember that taste? A taste of childhood. Fresh from the fairground. Holding hands with your father. The smell of sawdust and candy floss. Still slightly nauseous from the teacups. Brilliant.

And, even more brilliant, it's a doddle to make. Only 3 ingredients.

Start with 200g caster sugar and 6 tbsp golden syrup in a heavy bottomed pan. Heat over low flame until it's golden and bubbling - about 3-5 mins. Lightly oil a foil lined baking tin.

Now, I cannot stress this enough. BE CAREFUL. Hot sugar can hurt you. Alot. Do not be temped to stick a pinky in. You will regret it.


When it's all bubbly and golden, quickly whisk 1 tbsp of bicarbonate of soda. It will immediately fluff up . Dump it into your greased tin.



Hey presto. Shazam. Done. Just leave it to cool until it's hard and you can mash it in to bits.
