Tomato Basil Salad

It's summer and I can't seem to get enough tomatoes in my body. Which is good, because they are great this time of year. This salad makes me smile. It's as tasty as it is pretty. This is hardly a recipe, just a quick, simple salad you can fling together in two minutes that makes the most of your tomatoes.  I used little red and yellow plum tomatoes that were amazingly sweet. 

Tomato Salad

Little tomatoes - red, yellow, plum, cherry, whatever
Handful of fresh basil leaves
Extra virgin olive oil
Balsamic vinegar
Ground black pepper
Coarse sea salt

Just half your tomatoes, chop the basil and stir together. Add a generous glug of olive oil, a good dash of balsamic vinegar and a big pinch of coarse sea salt - tomatoes love salt. Serve with a grind of black pepper. (Goes great with some mozzarella slices drizzled with pesto and a chilled glass of white)
